Baked Pork Chops with Potatoes
Ingredients:
- 6 bone-in pork chops
- 4 medium potatoes, thinly sliced
- 1 medium onion, thinly sliced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Pork Chops:
- Season the pork chops on both sides with salt, black pepper, garlic powder, onion powder, and paprika.
- In a large skillet, heat the olive oil and butter over medium-high heat.
- Sear the pork chops for about 2-3 minutes on each side until they are golden brown. Remove and set aside.
- Prepare the Potatoes and Onion:
- In the same skillet, add the thinly sliced potatoes and onion. Cook for 5-7 minutes until they start to soften.
- Sprinkle the flour over the potatoes and onions, stirring to coat evenly.
- Add the Cream and Broth:
- Slowly pour in the chicken broth and heavy cream, stirring constantly until the mixture thickens.
- Season with additional salt and black pepper to taste.
- Assemble the Dish:
- In a greased 9×13-inch baking dish, layer the potatoes and onion mixture evenly on the bottom.
- Arrange the seared pork chops on top of the potatoes.
- Bake:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the pork chops are fully cooked and the potatoes are tender.
- Serve:
- Garnish with chopped fresh parsley.
- Serve hot, with the creamy potatoes and onions alongside the pork chops.
