Banana Bread with Caramel Glaze
Ingredients:
For the Banana Bread:
- 2-3 ripe bananas, mashed
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- A pinch of salt
- 1 1/2 cups (190g) all-purpose flour
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup chopped nuts or chocolate chips (optional)
For the Caramel Glaze:
- 1/4 cup (60g) unsalted butter
- 1/2 cup (100g) brown sugar, packed
- 2 tablespoons heavy cream or milk
- 1/2 teaspoon vanilla extract
- A pinch of salt
- 1/2 cup powdered sugar, sifted
Instructions:
- Make the Banana Bread:
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter.
- Mix in the sugar, beaten egg, and vanilla extract until well combined.
- Sprinkle the baking soda and salt over the mixture, and then stir to combine.
- Add the flour and cinnamon (if using) and mix just until the batter is smooth. Be careful not to overmix.
- If desired, fold in the chopped nuts or chocolate chips.
- Pour the batter into the prepared loaf pan.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Make the Caramel Glaze:
- In a small saucepan, melt the butter over medium heat.
- Stir in the brown sugar and cream, and cook while stirring constantly until the mixture starts to boil.
- Let it boil for 1-2 minutes, then remove from heat.
- Stir in the vanilla extract and salt.
- Gradually whisk in the powdered sugar until the glaze is smooth and slightly thickened.
- Allow the glaze to cool slightly, then pour it over the cooled banana bread.
- Serve:
- Slice the banana bread and enjoy the rich flavor of the caramel glaze on top.
