Banana Bread with Caramel Glaze

 

Ingredients:

For the Banana Bread:

  • 2-3 ripe bananas, mashed
  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • A pinch of salt
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chopped nuts or chocolate chips (optional)

For the Caramel Glaze:

  • 1/4 cup (60g) unsalted butter
  • 1/2 cup (100g) brown sugar, packed
  • 2 tablespoons heavy cream or milk
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • 1/2 cup powdered sugar, sifted

Instructions:

  1. Make the Banana Bread:
    • Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
    • In a large mixing bowl, mash the ripe bananas with a fork until smooth.
    • Stir in the melted butter.
    • Mix in the sugar, beaten egg, and vanilla extract until well combined.
    • Sprinkle the baking soda and salt over the mixture, and then stir to combine.
    • Add the flour and cinnamon (if using) and mix just until the batter is smooth. Be careful not to overmix.
    • If desired, fold in the chopped nuts or chocolate chips.
    • Pour the batter into the prepared loaf pan.
    • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  2. Make the Caramel Glaze:
    • In a small saucepan, melt the butter over medium heat.
    • Stir in the brown sugar and cream, and cook while stirring constantly until the mixture starts to boil.
    • Let it boil for 1-2 minutes, then remove from heat.
    • Stir in the vanilla extract and salt.
    • Gradually whisk in the powdered sugar until the glaze is smooth and slightly thickened.
    • Allow the glaze to cool slightly, then pour it over the cooled banana bread.
  3. Serve:
    • Slice the banana bread and enjoy the rich flavor of the caramel glaze on top.
