Banana Nut Delight Cake with Creamy Vanilla Glaze
Ingredients
For the Cake:
- 3 ripe bananas, mashed
- 1 cup sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
- 1/2 cup chopped pecans
For the Topping:
- 1/2 cup butter
- 1/4 cup milk
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- Sliced bananas, for garnish
- Whole walnuts and pecans, for garnish
Instructions
Cake:
- Preheat the oven to 350°F (175°C). Grease and flour an 8-inch cake pan.
- In a large bowl, combine the mashed bananas with sugar, eggs, vegetable oil, sour cream, and vanilla extract. Mix well until smooth.
- In another bowl, sift together the flour, baking soda, and salt. Gradually add to the banana mixture, stirring until just combined.
- Fold in the chopped walnuts and pecans.
- Pour the batter into the prepared pan and bake for about 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Topping:
- In a small saucepan, melt the butter over medium heat. Add the milk and bring to a boil. Remove from heat.
- Stir in the powdered sugar and vanilla extract until smooth. If the glaze is too thick, add a little more milk to reach a pourable consistency.
- Drizzle the glaze over the cooled cake.
- Arrange the sliced bananas, whole walnuts, and pecans on top of the cake while the glaze is still wet so they stick.
