Banana Nut Delight Cake with Creamy Vanilla Glaze

 

 

Ingredients

For the Cake:

  • 3 ripe bananas, mashed
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped pecans

For the Topping:

  • 1/2 cup butter
  • 1/4 cup milk
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Sliced bananas, for garnish
  • Whole walnuts and pecans, for garnish

Instructions

Cake:

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch cake pan.
  2. In a large bowl, combine the mashed bananas with sugar, eggs, vegetable oil, sour cream, and vanilla extract. Mix well until smooth.
  3. In another bowl, sift together the flour, baking soda, and salt. Gradually add to the banana mixture, stirring until just combined.
  4. Fold in the chopped walnuts and pecans.
  5. Pour the batter into the prepared pan and bake for about 45-50 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Topping:

  1. In a small saucepan, melt the butter over medium heat. Add the milk and bring to a boil. Remove from heat.
  2. Stir in the powdered sugar and vanilla extract until smooth. If the glaze is too thick, add a little more milk to reach a pourable consistency.
  3. Drizzle the glaze over the cooled cake.
  4. Arrange the sliced bananas, whole walnuts, and pecans on top of the cake while the glaze is still wet so they stick.
