Berry Pie with Ice Cream

 

Ingredients

For the Pie Crust:

  • 2 ½ cups all-purpose flour

  • 1 cup unsalted butter, cold and cubed 🧈

  • ½ tsp salt 🧂

  • 1 tbsp sugar

  • 6-8 tbsp ice water 💧

For the Berry Filling:

  • 4 cups mixed berries (strawberries, blueberries, raspberries, or blackberries) 🍓🫐

  • ¾ cup granulated sugar

  • 3 tbsp cornstarch

  • 1 tbsp lemon juice 🍋

  • 1 tsp vanilla extract

For Serving:

  • 1 scoop vanilla ice cream per serving 🍨

  • Powdered sugar (optional)

Instructions

Prepare the Pie Crust:

  1. In a bowl, mix flour, sugar, and salt.

  2. Cut in the cold butter until the mixture resembles coarse crumbs.

  3. Add ice water, one tablespoon at a time, mixing until the dough comes together.

  4. Divide into two disks, wrap in plastic wrap, and chill for 30 minutes.

Prepare the Berry Filling:

  1. In a bowl, mix berries, sugar, cornstarch, lemon juice, and vanilla extract. Let sit for 10 minutes.

Assemble the Pie:

  1. Roll out one dough disk and place it in a greased pie pan.

  2. Pour the berry mixture into the crust.

  3. Roll out the second disk and place it on top, sealing the edges. Cut a few slits for steam to escape.

Bake the Pie:

  1. Preheat the oven to 375°F (190°C).

  2. Bake for 40-45 minutes until golden brown.

  3. Let cool for at least 30 minutes before slicing.

Serve & Enjoy:

  1. Serve warm with a scoop of vanilla ice cream on top. 🍨😋✨
