Berry Pie with Ice Cream
Ingredients
For the Pie Crust:

2 Β½ cups all-purpose flour

1 cup unsalted butter, cold and cubed π§

Β½ tsp salt π§

1 tbsp sugar

6-8 tbsp ice water π§

For the Berry Filling:

4 cups mixed berries (strawberries, blueberries, raspberries, or blackberries) ππ«

ΒΎ cup granulated sugar

3 tbsp cornstarch
-
1 tbsp lemon juice π
-
1 tsp vanilla extract

For Serving:

1 scoop vanilla ice cream per serving π¨

Powdered sugar (optional)
Instructions
Prepare the Pie Crust:

In a bowl, mix flour, sugar, and salt.

Cut in the cold butter until the mixture resembles coarse crumbs.

Add ice water, one tablespoon at a time, mixing until the dough comes together.

Divide into two disks, wrap in plastic wrap, and chill for 30 minutes.
Prepare the Berry Filling:

In a bowl, mix berries, sugar, cornstarch, lemon juice, and vanilla extract. Let sit for 10 minutes.
Assemble the Pie:

Roll out one dough disk and place it in a greased pie pan.

Pour the berry mixture into the crust.

Roll out the second disk and place it on top, sealing the edges. Cut a few slits for steam to escape.

Preheat the oven to 375Β°F (190Β°C).

Bake for 40-45 minutes until golden brown.
