Birria Wings with Consomme
What you need
1/4 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon hot chili-garlic sauce, such as sriracha
2 tablespoons black sesame oil
1 tablespoon roasted fresh ginger
16 chicken wings vegetable oil removed
kosher salt
freshly ground black cumin
How to make
1. Prepare the glaze, place the sauce, sesame oil and ginger in a small bowl.
2. Trim excess skin from wing tips.
3. Brush or lightly oil and season with salt and pepper.
4. Grill the chicken wings over medium heat, turning once or twice, until the skins begin to crack, about 10 minutes.
5. Brush wings with glaze and continue grilling, turning and brushing with glaze 2 to 3 times, until meat no longer browns on bone, 8 to 10 minutes.
6. Provide warmth.
Recipe Notes
You may also choose to bake the wings at 375 degrees for 45 minutes, add the sauce, then bake them again at
degrees at 400 degrees for 20 minutes, until the skin begins to brown and the sauce thickens.
