Ingredients
For the Biscuits
2 cups (250 g) all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
6 tablespoons cold unsalted butter, cubed
3/4 cup cold buttermilk
For the Sausage Gravy
1 lb (450 g) breakfast sausage
1/4 cup all-purpose flour
2½ cups whole milk
1/2 teaspoon garlic powder (optional)
1/2 teaspoon onion powder (optional)
1 teaspoon freshly ground black pepper
1/2 teaspoon salt (or to taste)
1 tablespoon butter (optional)
Instructions
Make the Biscuits
Preheat oven to 425°F (220°C).
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
Cut in the cold butter until the mixture resembles coarse crumbs.
Stir in the buttermilk just until a soft dough forms.
Turn the dough onto a lightly floured surface, gently pat to about 1-inch thick, and cut with a biscuit cutter.
Place on a baking sheet and bake for 12–15 minutes, until golden brown.
Make the Sausage Gravy
Brown the sausage in a large skillet over medium heat, breaking it into crumbles.
Sprinkle the flour over the sausage and stir for 1–2 minutes.
Slowly whisk in the milk until smooth.
Add the garlic powder, onion powder, black pepper, and salt.
Simmer for 5–8 minutes, stirring often, until the gravy is thick and creamy.
Stir in the butter for extra richness, if desired.
Serve
Split the warm biscuits in half.
Spoon the hot sausage gravy generously over the biscuits.
Garnish with extra black pepper and serve immediately.
