Boiled and Baked Bread Rolls Recipe

 

 

 

Ingredients:

  • 3 1/2 cups all-purpose flour (450g)
  • 1 packet instant yeast (2 1/4 teaspoons)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup warm water (240 ml, about 110°F or 45°C)
  • 2 tablespoons vegetable oil or melted butter

For Boiling:

  • 8 cups water
  • 2 tablespoons baking soda (for a shiny crust)

For Brushing:

  • 1 egg yolk mixed with 1 tablespoon water (for egg wash)

Instructions:

1. Prepare the Dough:

  1. In a large bowl, combine flour, yeast, sugar, and salt.
  2. Gradually add the warm water and oil. Mix to form a rough dough.
  3. Knead the dough for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it, and let it rise for 1 hour or until it doubles in size.

2. Shape the Rolls:

  1. Punch down the dough and divide it into 6 equal portions.
  2. Roll each portion into an oval or log shape to resemble mini baguettes.
  3. Place the shaped rolls on a baking sheet lined with parchment paper.
  4. Cover them with a damp towel and let them rest for 15 minutes.

3. Boil the Rolls:

  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, bring 8 cups of water to a boil.
  3. Add baking soda to the boiling water (it may bubble).
  4. Gently drop 2-3 rolls into the boiling water and boil for 30 seconds per side.
  5. Use a slotted spoon to remove the rolls and place them back on the baking sheet.

4. Bake:

  1. Brush the tops of the boiled rolls with egg wash.
  2. Using a sharp knife or blade, score the tops of the rolls with a few diagonal cuts.
  3. Bake in the preheated oven for 15-20 minutes, or until golden brown and crisp.

Tips:

  • Boiling with baking soda gives the bread a chewy crust and beautiful shine.
  • Brush with melted butter after baking for a softer texture.
  • These rolls pair perfectly with soups, stews, or as sandwich bread.
