Braised Beef with Tomatoes Recipe
Ingredients:
- 3 pounds beef chuck roast, cut into large chunks
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 can (14.5 ounces) diced tomatoes
- 2 tablespoons tomato paste
- 1 cup red wine (optional, can substitute with more beef broth)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- 1 cup cherry tomatoes, halved
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Beef:
- Season the beef chunks generously with salt and pepper.
- In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat.
- Add the beef chunks to the pot in batches, searing them on all sides until browned. Remove the beef from the pot and set aside.
- Sauté the Vegetables:
- In the same pot, add the diced onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Deglaze and Build the Sauce:
- Pour in the beef broth, scraping up any browned bits from the bottom of the pot.
- Stir in the diced tomatoes, tomato paste, and red wine (if using).
- Add the Worcestershire sauce, dried thyme, dried rosemary, and bay leaves. Stir to combine.
- Braise the Beef:
- Return the seared beef chunks to the pot, ensuring they are submerged in the liquid.
- Bring the mixture to a simmer, then reduce the heat to low.
- Cover the pot with a lid and let it cook for 2.5 to 3 hours, or until the beef is tender and easily falls apart.
- Add the Cherry Tomatoes:
- About 30 minutes before the end of the cooking time, add the halved cherry tomatoes to the pot.
- Stir to combine and let the tomatoes cook until they are softened.
- Finish and Serve:
- Remove the bay leaves from the pot and discard.
- Taste and adjust the seasoning with salt and pepper if needed.
- Garnish with chopped fresh parsley.
- Serving Suggestions:
- Serve the braised beef with tomatoes over mashed potatoes, rice, or pasta.
- Pair with a side of crusty bread to soak up the delicious sauce.
Enjoy this hearty and flavorful Braised Beef with Tomatoes, perfect for a comforting dinner that will impress your family and guests. The tender beef and rich tomato sauce create a dish that is both satisfying and delicious.
