Caramel-Glazed Donuts with Cream Filling Recipe
Ingredients:
For the Donuts:
- 2 1/4 teaspoons (1 packet) active dry yeast
- 1/4 cup warm water
- 3/4 cup warm milk
- 1/4 cup granulated sugar
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 large egg
- 3 tablespoons unsalted butter (softened)
- Oil for frying
For the Custard Filling:
- 1 1/2 cups whole milk
- 1/4 cup granulated sugar
- 3 large egg yolks
- 3 tablespoons cornstarch
- 2 teaspoons vanilla extract
For the Caramel Glaze:
- 1/2 cup granulated sugar
- 2 tablespoons butter
- 3 tablespoons heavy cream
Topping:
- 1/4 cup granulated sugar (for sprinkling)
Instructions:
Step 1: Make the Donut Dough
- Dissolve yeast in warm water and let it activate (about 5 minutes).
- In a mixing bowl, combine warm milk, sugar, yeast mixture, egg, butter, salt, and flour. Knead into a soft dough.
- Cover and let it rise for 1-1.5 hours, or until doubled in size.
- Roll out the dough on a floured surface to about 1/2-inch thickness. Cut donut shapes and a hole in the middle (or leave whole for filled donuts). Let them rest for 30 minutes.
Step 2: Make the Custard
- In a saucepan, heat milk until just simmering.
- In a bowl, whisk egg yolks, sugar, and cornstarch. Slowly add the hot milk to the egg mixture while whisking, then return the mixture to the saucepan.
- Cook over medium heat, stirring, until thickened. Remove from heat and stir in vanilla extract.
- Let cool, then transfer to a piping bag for filling.
Step 3: Fry the Donuts
- Heat oil in a deep pan to 350°F (175°C). Fry donuts in batches until golden brown, about 1-2 minutes per side.
- Drain on a wire rack.
Step 4: Make the Caramel Glaze
- Heat sugar in a pan over medium heat until melted and amber in color.
- Stir in butter until combined, then add cream while whisking until smooth. Remove from heat.
Step 5: Assemble
- Dip each donut top into the caramel glaze and let it set.
- Use a piping bag to fill each donut with custard through the side or center.
- Sprinkle the caramel glaze with sugar for a crunchy topping.
