Caramel Peanut Butter Truffles
Ingredients:
- 1 ½ cups crushed digestive biscuits or graham crackers
- ½ cup creamy peanut butter
- ¼ cup powdered sugar
- 2 tablespoons unsalted butter, melted
- 1 cup caramel (melted, or soft caramel candies)
- Optional: 1 tablespoon heavy cream (to thin the caramel if needed)
Instructions:
- Prepare the Filling:
- In a mixing bowl, combine crushed biscuits, peanut butter, powdered sugar, and melted butter. Mix until it forms a firm, dough-like consistency.
- Shape into Balls:
- Roll the mixture into small bite-sized balls. Place them on a tray lined with parchment paper and chill in the freezer for 15–20 minutes.
- Melt the Caramel:
- If using soft caramel candies, melt them in a heatproof bowl over a double boiler or in the microwave (in 20-second intervals). Stir until smooth. Add a bit of heavy cream if the caramel is too thick.
- Coat the Truffles:
- Using a fork or skewer, dip the chilled balls into the melted caramel, ensuring they’re fully coated. Place them back on the parchment-lined tray.
- Set the Coating:
- Let the truffles cool until the caramel coating hardens. You can place the tray in the fridge for faster setting.
- Serve:
- Enjoy these rich, sweet, and nutty treats! Store them in an airtight container at room temperature or in the fridge.
