Caramel Peanut Butter Truffles

Ingredients:

  • 1 ½ cups crushed digestive biscuits or graham crackers
  • ½ cup creamy peanut butter
  • ¼ cup powdered sugar
  • 2 tablespoons unsalted butter, melted
  • 1 cup caramel (melted, or soft caramel candies)
  • Optional: 1 tablespoon heavy cream (to thin the caramel if needed)

Instructions:

  1. Prepare the Filling:
    • In a mixing bowl, combine crushed biscuits, peanut butter, powdered sugar, and melted butter. Mix until it forms a firm, dough-like consistency.
  2. Shape into Balls:
    • Roll the mixture into small bite-sized balls. Place them on a tray lined with parchment paper and chill in the freezer for 15–20 minutes.
  3. Melt the Caramel:
    • If using soft caramel candies, melt them in a heatproof bowl over a double boiler or in the microwave (in 20-second intervals). Stir until smooth. Add a bit of heavy cream if the caramel is too thick.
  4. Coat the Truffles:
    • Using a fork or skewer, dip the chilled balls into the melted caramel, ensuring they’re fully coated. Place them back on the parchment-lined tray.
  5. Set the Coating:
    • Let the truffles cool until the caramel coating hardens. You can place the tray in the fridge for faster setting.
  6. Serve:
    • Enjoy these rich, sweet, and nutty treats! Store them in an airtight container at room temperature or in the fridge.
