Caramel Pecan Chex Mix

 

 

 

Ingredients:

  • 6 cups rice or corn Chex cereal
  • 1 cup pecan halves
  • 1/2 cup unsalted butter
  • 1/2 cup light brown sugar
  • 1/4 cup light corn syrup or honey
  • 1/4 tsp baking soda
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Prepare the Mix:
    • In a large mixing bowl, combine the Chex cereal and pecans. Set aside.
  2. Make the Caramel Sauce:
    • In a medium saucepan, melt the butter over medium heat.
    • Add brown sugar and corn syrup. Stir until combined and bring to a boil.
    • Let the mixture boil for 1–2 minutes without stirring.
  3. Add Baking Soda and Vanilla:
    • Remove the saucepan from heat.
    • Stir in the baking soda, vanilla extract, and a pinch of salt. The mixture will foam up slightly.
  4. Coat the Cereal and Pecans:
    • Quickly pour the caramel sauce over the cereal and pecans, tossing gently to coat evenly.
  5. Bake for a Crunchy Texture:
    • Preheat your oven to 250°F (120°C).
    • Spread the caramel-coated mix onto a parchment-lined baking sheet.
    • Bake for 45 minutes, stirring every 15 minutes for even coating.
  6. Cool and Serve:
    • Remove from the oven and allow to cool completely. The caramel will harden as it cools.
    • Break into clusters and serve.
