Caramel Pecan Chex Mix
Ingredients:
- 6 cups rice or corn Chex cereal
- 1 cup pecan halves
- 1/2 cup unsalted butter
- 1/2 cup light brown sugar
- 1/4 cup light corn syrup or honey
- 1/4 tsp baking soda
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions:
- Prepare the Mix:
- In a large mixing bowl, combine the Chex cereal and pecans. Set aside.
- Make the Caramel Sauce:
- In a medium saucepan, melt the butter over medium heat.
- Add brown sugar and corn syrup. Stir until combined and bring to a boil.
- Let the mixture boil for 1–2 minutes without stirring.
- Add Baking Soda and Vanilla:
- Remove the saucepan from heat.
- Stir in the baking soda, vanilla extract, and a pinch of salt. The mixture will foam up slightly.
- Coat the Cereal and Pecans:
- Quickly pour the caramel sauce over the cereal and pecans, tossing gently to coat evenly.
- Bake for a Crunchy Texture:
- Preheat your oven to 250°F (120°C).
- Spread the caramel-coated mix onto a parchment-lined baking sheet.
- Bake for 45 minutes, stirring every 15 minutes for even coating.
- Cool and Serve:
- Remove from the oven and allow to cool completely. The caramel will harden as it cools.
- Break into clusters and serve.
