Cheese-Stuffed Meatloaf with BBQ Glaze
Ingredients:
- For the Meatloaf:
- 2 lbs ground beef
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup chopped parsley (optional)
- For the BBQ Glaze:
- 1 cup BBQ sauce
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- Prepare the Meatloaf Mixture:
- In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, minced garlic, grated Parmesan cheese, eggs, Worcestershire sauce, salt, and pepper. Mix until well combined.
- Stuff the Meatloaf:
- On a piece of parchment paper or plastic wrap, flatten the meat mixture into a rectangle about 1/2-inch thick. Spread the shredded cheddar cheese evenly over the meat, leaving a small border around the edges. If using, sprinkle the chopped parsley on top of the cheese.
- Starting from one end, carefully roll the meat into a log, using the parchment paper or plastic wrap to help you. Seal the edges and ends well to keep the cheese inside.
- Shape the Meatloaf:
- Transfer the meatloaf to the prepared baking sheet or loaf pan, shaping it into a loaf if necessary.
- Make the BBQ Glaze:
- In a small bowl, combine the BBQ sauce, ketchup, brown sugar, and apple cider vinegar. Mix well.
- Bake the Meatloaf:
- Spread about half of the BBQ glaze over the top of the meatloaf. Bake in the preheated oven for 45 minutes.
- Glaze and Finish Baking:
- After 45 minutes, spread the remaining BBQ glaze over the meatloaf. Continue baking for an additional 15-20 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (70°C).
- Rest and Serve:
- Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps the juices redistribute and keeps the meatloaf moist.
