Cheese-Stuffed Meatloaf with BBQ Glaze

 

Ingredients:

  • For the Meatloaf:
    • 2 lbs ground beef
    • 1 cup breadcrumbs
    • 1/2 cup milk
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1/2 cup grated Parmesan cheese
    • 2 large eggs
    • 1 tablespoon Worcestershire sauce
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 cup shredded cheddar cheese
    • 1/2 cup chopped parsley (optional)
  • For the BBQ Glaze:
    • 1 cup BBQ sauce
    • 1/4 cup ketchup
    • 2 tablespoons brown sugar
    • 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Prepare the Meatloaf Mixture:
    • In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, minced garlic, grated Parmesan cheese, eggs, Worcestershire sauce, salt, and pepper. Mix until well combined.
  3. Stuff the Meatloaf:
    • On a piece of parchment paper or plastic wrap, flatten the meat mixture into a rectangle about 1/2-inch thick. Spread the shredded cheddar cheese evenly over the meat, leaving a small border around the edges. If using, sprinkle the chopped parsley on top of the cheese.
    • Starting from one end, carefully roll the meat into a log, using the parchment paper or plastic wrap to help you. Seal the edges and ends well to keep the cheese inside.
  4. Shape the Meatloaf:
    • Transfer the meatloaf to the prepared baking sheet or loaf pan, shaping it into a loaf if necessary.
  5. Make the BBQ Glaze:
    • In a small bowl, combine the BBQ sauce, ketchup, brown sugar, and apple cider vinegar. Mix well.
  6. Bake the Meatloaf:
    • Spread about half of the BBQ glaze over the top of the meatloaf. Bake in the preheated oven for 45 minutes.
  7. Glaze and Finish Baking:
    • After 45 minutes, spread the remaining BBQ glaze over the meatloaf. Continue baking for an additional 15-20 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (70°C).
  8. Rest and Serve:
    • Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps the juices redistribute and keeps the meatloaf moist.
  9. Enjoy:
    • Slice the meatloaf and serve with your favorite side dishes, such as mashed potatoes, roasted vegetables, or a fresh salad.
