Cheesy Beef and Vegetable Casserole
Ingredients:
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 zucchini, chopped
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (8 ounces) tomato sauce
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked rice
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Oven and Pan:
- Preheat your oven to 375°F (190°C).
- Grease a 9×13 inch baking dish.
- Cook the Beef and Vegetables:
- In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is soft. Drain any excess fat.
- Add the red bell pepper, green bell pepper, and zucchini to the skillet. Cook for about 5 minutes, until the vegetables are tender.
- Make the Sauce:
- Stir in the diced tomatoes (with juice), tomato sauce, basil, oregano, salt, and black pepper.
- Bring the mixture to a simmer and cook for about 10 minutes, stirring occasionally.
- Combine with Rice:
- Stir in the cooked rice until well combined.
- Assemble the Casserole:
- Transfer the beef and vegetable mixture to the prepared baking dish.
- Sprinkle the cheddar cheese evenly over the top.
- Sprinkle the mozzarella cheese over the cheddar cheese.
- Bake the Casserole:
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve:
- Garnish with chopped fresh parsley.
- Let the casserole cool for a few minutes before serving.
