Cheesy Beef and Vegetable Casserole

 

Ingredients:

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Oven and Pan:
    • Preheat your oven to 375°F (190°C).
    • Grease a 9×13 inch baking dish.
  2. Cook the Beef and Vegetables:
    • In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is soft. Drain any excess fat.
    • Add the red bell pepper, green bell pepper, and zucchini to the skillet. Cook for about 5 minutes, until the vegetables are tender.
  3. Make the Sauce:
    • Stir in the diced tomatoes (with juice), tomato sauce, basil, oregano, salt, and black pepper.
    • Bring the mixture to a simmer and cook for about 10 minutes, stirring occasionally.
  4. Combine with Rice:
    • Stir in the cooked rice until well combined.
  5. Assemble the Casserole:
    • Transfer the beef and vegetable mixture to the prepared baking dish.
    • Sprinkle the cheddar cheese evenly over the top.
    • Sprinkle the mozzarella cheese over the cheddar cheese.
  6. Bake the Casserole:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Garnish with chopped fresh parsley.
    • Let the casserole cool for a few minutes before serving.
