Cheesy Broccoli and Cauliflower Casserole

 

 

Ingredients:

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk (warm)
  • 1 cup cheddar cheese (shredded)
  • 1/4 cup Parmesan cheese (grated)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter (melted)
  • Fresh thyme or parsley (optional, for garnish)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the vegetables:
    • Bring a large pot of salted water to a boil.
    • Add the broccoli and cauliflower florets and cook for 3-4 minutes until slightly tender but not fully cooked.
    • Drain and set aside.
  3. Make the cheese sauce:
    • In a medium saucepan, melt 2 tablespoons of butter over medium heat.
    • Whisk in the flour and cook for 1 minute, stirring constantly.
    • Gradually whisk in the warm milk and cook until the mixture thickens.
    • Stir in the cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper until the cheese is melted and smooth.
  4. Assemble the casserole:
    • Place the broccoli and cauliflower florets in a greased 8×8-inch baking dish.
    • Pour the cheese sauce evenly over the vegetables, ensuring they are well coated.
  5. Add the topping:
    • In a small bowl, mix the breadcrumbs with the melted butter.
    • Sprinkle the breadcrumb mixture over the casserole.
  6. Bake the casserole:
    • Bake for 20-25 minutes, or until the topping is golden brown and the cheese sauce is bubbling.
  7. Garnish and serve:
    • Sprinkle fresh thyme or parsley over the top before serving, if desired
