Cheesy Cabbage and Meat Casserole

 

Ingredients:

  • 1 medium head of cabbage, chopped
  • 1 lb ground beef
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups cooked rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook Cabbage: In a large pot, bring water to a boil. Add the chopped cabbage and cook for 5-7 minutes until tender. Drain and set aside.
  3. Prepare Meat Mixture: In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent. Add the ground beef, breaking it apart as it cooks, until browned. Season with salt and pepper.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked rice, diced tomatoes, and tomato sauce with the ground beef mixture.
  5. Assemble Casserole: In a greased 9×13 inch baking dish, layer half of the cabbage on the bottom. Spread half of the meat and rice mixture over the cabbage. Repeat layers with the remaining cabbage and meat mixture.
  6. Top with Cheese: Sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  8. Garnish and Serve: Remove from the oven and let it rest for a few minutes. Garnish with chopped green onions before serving.
