Cheesy Garlic Shrimp Toast Recipe

 

Ingredients:

  • 1 baguette or French bread, sliced in half lengthwise
  • 2 cups shredded mozzarella cheese
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • Optional: red pepper flakes for a bit of heat

Instructions:

  1. Prepare the Bread:
    • Preheat your oven to 375°F (190°C). Place the bread halves on a baking sheet, cut side up.
  2. Cook the Shrimp:
    • In a large skillet, heat the olive oil and 1 tbsp of butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
    • Add the shrimp to the skillet. Season with paprika, salt, and pepper. Cook until the shrimp are pink and opaque, about 3-4 minutes. Remove from heat and set aside.
  3. Make the Garlic Butter:
    • In a small saucepan, melt the remaining 2 tbsp of butter. Add a bit more minced garlic if desired and cook until fragrant, about 1 minute.
  4. Assemble the Toast:
    • Brush the garlic butter evenly over the cut sides of the bread. Sprinkle half of the shredded mozzarella cheese on top of the bread.
    • Distribute the cooked shrimp evenly over the cheese. Sprinkle the remaining mozzarella cheese on top of the shrimp.
  5. Bake the Toast:
    • Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly and the edges of the bread are golden brown.
  6. Finish and Serve:
    • Remove the bread from the oven. Drizzle with lemon juice and garnish with chopped fresh parsley. Sprinkle with red pepper flakes if desired.
    • Slice the bread into pieces and serve warm.
