Cheesy Garlic Shrimp Toast Recipe
Ingredients:
- 1 baguette or French bread, sliced in half lengthwise
- 2 cups shredded mozzarella cheese
- 1 lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- 3 tbsp butter
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
- Optional: red pepper flakes for a bit of heat
Instructions:
- Prepare the Bread:
- Preheat your oven to 375°F (190°C). Place the bread halves on a baking sheet, cut side up.
- Cook the Shrimp:
- In a large skillet, heat the olive oil and 1 tbsp of butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
- Add the shrimp to the skillet. Season with paprika, salt, and pepper. Cook until the shrimp are pink and opaque, about 3-4 minutes. Remove from heat and set aside.
- Make the Garlic Butter:
- In a small saucepan, melt the remaining 2 tbsp of butter. Add a bit more minced garlic if desired and cook until fragrant, about 1 minute.
- Assemble the Toast:
- Brush the garlic butter evenly over the cut sides of the bread. Sprinkle half of the shredded mozzarella cheese on top of the bread.
- Distribute the cooked shrimp evenly over the cheese. Sprinkle the remaining mozzarella cheese on top of the shrimp.
- Bake the Toast:
- Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly and the edges of the bread are golden brown.
- Finish and Serve:
- Remove the bread from the oven. Drizzle with lemon juice and garnish with chopped fresh parsley. Sprinkle with red pepper flakes if desired.
- Slice the bread into pieces and serve warm.
