Cheesy Potato Casserole

 

Ingredients:

  • 6 large potatoes, peeled and thinly sliced
  • 1 large onion, thinly sliced
  • 2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • Fresh herbs (such as parsley or dill) for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the potatoes:
    • Peel and thinly slice the potatoes into rounds. Slice the onion as well.
  3. Layer the casserole:
    • Grease a baking dish with butter. Begin by layering half of the sliced potatoes at the bottom of the dish. Follow with a layer of half of the sliced onions.
    • Sprinkle half of the minced garlic over the onions and season with salt, pepper, and paprika (if using).
    • Sprinkle a generous amount of shredded cheese over the layer.
    • Repeat the layers with the remaining potatoes, onions, garlic, and seasonings.
  4. Add the cream:
    • Pour the heavy cream evenly over the layered potatoes and onions. The cream will help the potatoes cook through and become tender while adding richness to the dish.
  5. Top with cheese:
    • Sprinkle the remaining cheese over the top layer of potatoes.
  6. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
    • After 45 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.
  7. Garnish and serve:
    • Remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh herbs like chopped parsley or dill before serving.

This cheesy potato casserole makes a great side dish for any meal and is perfect for family gatherings or potlucks.
