Cheesy Potato Casserole
Ingredients:
- 6 large potatoes, peeled and thinly sliced
- 1 large onion, thinly sliced
- 2 cups shredded cheese (cheddar, mozzarella, or a blend)
- 1 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
- Fresh herbs (such as parsley or dill) for garnish
Instructions:
- Preheat the oven to 375°F (190°C).
- Prepare the potatoes:
- Peel and thinly slice the potatoes into rounds. Slice the onion as well.
- Layer the casserole:
- Grease a baking dish with butter. Begin by layering half of the sliced potatoes at the bottom of the dish. Follow with a layer of half of the sliced onions.
- Sprinkle half of the minced garlic over the onions and season with salt, pepper, and paprika (if using).
- Sprinkle a generous amount of shredded cheese over the layer.
- Repeat the layers with the remaining potatoes, onions, garlic, and seasonings.
- Add the cream:
- Pour the heavy cream evenly over the layered potatoes and onions. The cream will help the potatoes cook through and become tender while adding richness to the dish.
- Top with cheese:
- Sprinkle the remaining cheese over the top layer of potatoes.
- Bake:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
- After 45 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.
- Garnish and serve:
- Remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh herbs like chopped parsley or dill before serving.
