Cheesy Potato Frittata
Ingredients:
- 4 medium potatoes, peeled and sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1/2 cup diced bell pepper (red or green)
- 1/4 cup chopped green onions
- 4 large eggs
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Fresh parsley, chopped, for garnish
Instructions:
- Prepare the Potatoes:
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Add the sliced potatoes and cook until golden brown on both sides, about 5-7 minutes per side. Remove from the skillet and set aside.
- Prepare the Egg Mixture:
- In a medium bowl, whisk together the eggs, heavy cream, diced bell pepper, chopped green onions, salt, black pepper, and garlic powder until well combined.
- Assemble the Frittata:
- Preheat your oven to 375°F (190°C).
- In the same skillet, arrange the fried potato slices in an even layer.
- Pour the egg mixture over the potatoes, spreading it out evenly.
- Sprinkle the shredded mozzarella cheese over the top.
- Cook the Frittata:
- Place the skillet in the preheated oven and bake for 20-25 minutes, or until the eggs are set and the cheese is melted and bubbly.
- Garnish and Serve:
- Remove the frittata from the oven and let it cool for a few minutes.
- Garnish with chopped fresh parsley.
