Cheesy Potato Muffins Recipe
Ingredients:
- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese (plus extra for topping)
- 2 large eggs
- 1/4 cup milk
- 1/4 cup sour cream
- 1/4 cup chopped green onions (optional)
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Cooking spray or melted butter for greasing
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Grease a muffin tin with cooking spray or melted butter.
- Prepare the Batter:
- In a large bowl, combine the mashed potatoes, shredded cheddar cheese, eggs, milk, and sour cream. Mix well until all ingredients are thoroughly combined.
- Stir in the chopped green onions, garlic powder, salt, and pepper.
- Fill the Muffin Tin:
- Spoon the potato mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Sprinkle a little extra shredded cheddar cheese on top of each muffin for a crispy, cheesy crust.
- Bake the Muffins:
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and set.
- Let the muffins cool in the tin for a few minutes before removing them.
- Serve:
- Serve the cheesy potato muffins warm, garnished with extra green onions if desired.
