Cheesy Potato Muffins Recipe

 

Ingredients:

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions (optional)
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking spray or melted butter for greasing

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
    • Grease a muffin tin with cooking spray or melted butter.
  2. Prepare the Batter:
    • In a large bowl, combine the mashed potatoes, shredded cheddar cheese, eggs, milk, and sour cream. Mix well until all ingredients are thoroughly combined.
    • Stir in the chopped green onions, garlic powder, salt, and pepper.
  3. Fill the Muffin Tin:
    • Spoon the potato mixture into the prepared muffin tin, filling each cup about 3/4 full.
    • Sprinkle a little extra shredded cheddar cheese on top of each muffin for a crispy, cheesy crust.
  4. Bake the Muffins:
    • Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and set.
    • Let the muffins cool in the tin for a few minutes before removing them.
  5. Serve:
    • Serve the cheesy potato muffins warm, garnished with extra green onions if desired.
