Cheesy Smothered Pork Chops

Ingredients:

  • 4 bone-in or boneless pork chops
  • Salt and black pepper (to taste)
  • 2 tablespoons olive oil or butter
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup shredded cheddar cheese (or a cheese blend)
  • 1 small onion, thinly sliced
  • 1 clove garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • Fresh parsley (for garnish)

Instructions:

  1. Season the Pork Chops:
    • Sprinkle pork chops with salt, pepper, paprika, and onion powder on both sides.
  2. Sear the Pork Chops:
    • Heat olive oil or butter in a skillet over medium-high heat.
    • Sear the pork chops for 3–4 minutes on each side until browned. Remove and set aside.
  3. Prepare the Sauce:
    • In the same skillet, sauté the onion until soft and caramelized (about 5 minutes).
    • Add garlic and cook for another minute.
    • Pour in the chicken broth, scraping the bottom of the skillet to release browned bits.
    • Stir in heavy cream and thyme. Simmer for 3–4 minutes until slightly thickened.
  4. Combine Pork Chops and Sauce:
    • Return the pork chops to the skillet.
    • Spoon the sauce over the pork chops and sprinkle cheese on top.
  5. Bake or Simmer:
    • Oven Option: Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 15–20 minutes, or until the cheese is melted and the pork chops are cooked through.
    • Stovetop Option: Cover the skillet and simmer on low heat for 10–15 minutes.
  6. Garnish and Serve:
    • Garnish with fresh parsley and serve with mashed potatoes, rice, or vegetables.
