Cheesy Stuffed Chicken Breasts with Bacon and Crispy Coating
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 1 cup crushed cornflakes or bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 2 tablespoons milk
- 2 tablespoons chopped fresh parsley (optional for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the Chicken:
- Carefully slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
- Stuff the Chicken:
- In a small bowl, mix the shredded mozzarella and cheddar cheeses.
- Stuff each chicken breast with the cheese mixture and some crumbled bacon.
- Secure the opening with toothpicks to keep the filling inside.
- Prepare the Coating:
- In a shallow dish, mix the crushed cornflakes (or bread crumbs), grated Parmesan cheese, paprika, garlic powder, salt, and black pepper.
- In another shallow dish, beat the eggs and milk together.
