Cheesy Stuffed Chicken Patties
Ingredients:
- For the Patties:
- 1 lb (450g) ground chicken (or turkey)
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp chopped parsley (plus extra for garnish)
- 1/2 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper to taste
- For the Filling:
- 1 cup shredded mozzarella cheese
- 1/4 cup cream cheese (optional for creaminess)
- For Cooking:
- 2 tbsp olive oil
- 1/4 cup chicken broth (optional, for extra moisture)
Instructions:
- Prepare the Filling:
- In a small bowl, mix the shredded mozzarella and cream cheese (if using). Form into 6 small balls and refrigerate to firm up.
- Make the Chicken Mixture:
- In a large bowl, combine ground chicken, breadcrumbs, egg, Parmesan cheese, garlic, parsley, onion powder, paprika, salt, and pepper. Mix until evenly combined.
- Shape the Patties:
- Divide the chicken mixture into 6 equal portions. Flatten each portion into a disc.
- Place a cheese ball in the center of each disc and fold the meat around it, sealing the edges to fully enclose the cheese.
- Cook the Patties:
- Heat olive oil in a large skillet over medium heat. Place the patties in the skillet and cook for 4-5 minutes on each side, until golden brown.
- If desired, add chicken broth to the skillet, cover, and cook for another 2-3 minutes to ensure they are fully cooked and juicy.
- Finish and Serve:
- Remove the patties from the skillet and garnish with extra chopped parsley. Serve hot with your choice of sides, such as mashed potatoes, a fresh salad, or steamed vegetables.
Tips:
- For an extra cheesy finish, sprinkle grated cheese on top of the patties during the last minute of cooking and cover to melt.
- You can also bake the patties at 375°F (190°C) for 20-25 minutes if you prefer.
