Cheesy Stuffed Meatloaf
Ingredients:
- Meatloaf:
- 2 lbs ground beef
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/2 cup milk
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- Cheese Filling:
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- Topping:
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
- Garnish:
- Fresh parsley, chopped
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Meatloaf Mixture:
- In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, eggs, milk, chopped onion, minced garlic, Worcestershire sauce, oregano, salt, and black pepper.
- Mix well until all ingredients are evenly combined.
- Shape the Meatloaf:
- On a large piece of parchment paper or aluminum foil, flatten the meatloaf mixture into a large rectangle, about 1/2-inch thick.
- Add the Cheese Filling:
- Sprinkle the shredded mozzarella and cheddar cheese evenly over the flattened meatloaf mixture, leaving a small border around the edges.
- Roll the Meatloaf:
- Carefully roll the meatloaf mixture into a log, starting from one of the shorter ends. Use the parchment paper or foil to help you roll it tightly.
- Seal the edges and ends to encase the cheese filling completely.
- Bake the Meatloaf:
- Transfer the meatloaf to a baking sheet lined with parchment paper or a lightly greased baking dish.
- In a small bowl, mix the ketchup, brown sugar, and Dijon mustard. Spread this mixture evenly over the top of the meatloaf.
- Bake:
- Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (71°C).
- Rest and Serve:
- Let the meatloaf rest for 10 minutes before slicing.
- Garnish with chopped fresh parsley.
