Cheesy Stuffed Meatloaf

 

Ingredients:

  • Meatloaf:
    • 2 lbs ground beef
    • 1 cup breadcrumbs
    • 1/2 cup grated Parmesan cheese
    • 2 large eggs
    • 1/2 cup milk
    • 1 medium onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tbsp Worcestershire sauce
    • 1 tsp dried oregano
    • 1 tsp salt
    • 1/2 tsp black pepper
  • Cheese Filling:
    • 2 cups shredded mozzarella cheese
    • 1 cup shredded cheddar cheese
  • Topping:
    • 1/2 cup ketchup
    • 2 tbsp brown sugar
    • 1 tbsp Dijon mustard
  • Garnish:
    • Fresh parsley, chopped

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, eggs, milk, chopped onion, minced garlic, Worcestershire sauce, oregano, salt, and black pepper.
    • Mix well until all ingredients are evenly combined.
  3. Shape the Meatloaf:
    • On a large piece of parchment paper or aluminum foil, flatten the meatloaf mixture into a large rectangle, about 1/2-inch thick.
  4. Add the Cheese Filling:
    • Sprinkle the shredded mozzarella and cheddar cheese evenly over the flattened meatloaf mixture, leaving a small border around the edges.
  5. Roll the Meatloaf:
    • Carefully roll the meatloaf mixture into a log, starting from one of the shorter ends. Use the parchment paper or foil to help you roll it tightly.
    • Seal the edges and ends to encase the cheese filling completely.
  6. Bake the Meatloaf:
    • Transfer the meatloaf to a baking sheet lined with parchment paper or a lightly greased baking dish.
    • In a small bowl, mix the ketchup, brown sugar, and Dijon mustard. Spread this mixture evenly over the top of the meatloaf.
  7. Bake:
    • Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (71°C).
  8. Rest and Serve:
    • Let the meatloaf rest for 10 minutes before slicing.
    • Garnish with chopped fresh parsley.
