Chicken Alfredo Pasta
Ingredients:
- For the Chicken:
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- For the Alfredo Sauce:
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup whole milk
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1/4 teaspoon ground nutmeg (optional)
- Fresh parsley, chopped (for garnish)
- For the Pasta:
- 8 ounces fettuccine or your favorite pasta
Instructions:
- Cook the Chicken:
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown and cooked through, about 5-7 minutes per side.
- Remove the chicken from the skillet and let it rest. Once cool enough to handle, slice the chicken into strips or bite-sized pieces.
- Cook the Pasta:
- Cook the fettuccine according to the package instructions until al dente. Drain and set aside.
- Make the Alfredo Sauce:
- In the same skillet used to cook the chicken, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Pour in the heavy cream and milk, stirring to combine. Bring the mixture to a gentle simmer.
- Gradually add the grated Parmesan cheese, stirring constantly until the cheese is fully melted and the sauce is smooth.
- Season the sauce with salt, pepper, and nutmeg (if using). Continue to simmer for a few more minutes until the sauce has thickened slightly.
- Combine the Pasta and Sauce:
- Add the cooked pasta to the skillet with the Alfredo sauce, tossing to coat the pasta evenly in the sauce.
- Serve:
- Divide the pasta among serving plates. Top with the sliced chicken.
- Garnish with freshly chopped parsley and additional grated Parmesan cheese if desired.
