Chicken Alfredo Pasta

 

Ingredients:

  • For the Chicken:
    • 2 boneless, skinless chicken breasts
    • Salt and pepper, to taste
    • 1 tablespoon olive oil
  • For the Alfredo Sauce:
    • 2 tablespoons unsalted butter
    • 3 cloves garlic, minced
    • 1 cup heavy cream
    • 1 cup whole milk
    • 1 cup grated Parmesan cheese
    • Salt and pepper, to taste
    • 1/4 teaspoon ground nutmeg (optional)
    • Fresh parsley, chopped (for garnish)
  • For the Pasta:
    • 8 ounces fettuccine or your favorite pasta

Instructions:

  1. Cook the Chicken:
    • Season the chicken breasts with salt and pepper on both sides.
    • In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook until golden brown and cooked through, about 5-7 minutes per side.
    • Remove the chicken from the skillet and let it rest. Once cool enough to handle, slice the chicken into strips or bite-sized pieces.
  2. Cook the Pasta:
    • Cook the fettuccine according to the package instructions until al dente. Drain and set aside.
  3. Make the Alfredo Sauce:
    • In the same skillet used to cook the chicken, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
    • Pour in the heavy cream and milk, stirring to combine. Bring the mixture to a gentle simmer.
    • Gradually add the grated Parmesan cheese, stirring constantly until the cheese is fully melted and the sauce is smooth.
    • Season the sauce with salt, pepper, and nutmeg (if using). Continue to simmer for a few more minutes until the sauce has thickened slightly.
  4. Combine the Pasta and Sauce:
    • Add the cooked pasta to the skillet with the Alfredo sauce, tossing to coat the pasta evenly in the sauce.
  5. Serve:
    • Divide the pasta among serving plates. Top with the sliced chicken.
    • Garnish with freshly chopped parsley and additional grated Parmesan cheese if desired.
  6. Enjoy:
    • Serve the Chicken Alfredo pasta immediately while hot and creamy.
