Chicken Salad with Grapes and Celery
Ingredients:
- 3 cups cooked chicken, shredded or diced
- 1 cup seedless red grapes, halved
- 1/2 cup celery, diced
- 1/4 cup red onion, finely chopped
- 1/3 cup sliced almonds or chopped walnuts (optional)
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt or sour cream (optional, for extra creaminess)
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Lettuce leaves or croissants (optional, for serving)
Instructions:
- Prepare the Chicken:
- If you don’t have pre-cooked chicken, you can poach or roast chicken breasts and then shred or dice them once they’ve cooled.
- Mix the Dressing:
- In a small bowl, whisk together the mayonnaise, Greek yogurt (if using), lemon juice, Dijon mustard, salt, and pepper. Adjust the seasoning to taste.
- Combine Ingredients:
- In a large mixing bowl, combine the cooked chicken, halved grapes, diced celery, red onion, and sliced almonds or walnuts (if using).
- Add the Dressing:
- Pour the dressing over the chicken mixture. Toss everything together until well coated.
- Chill:
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
