Chocolate Caramel Truffles

 

Ingredients:

For the Chocolate Truffle Base:
  • 1 cup heavy cream
  • 12 ounces semisweet chocolate, chopped
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
For the Caramel Drizzle:
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
For the Topping:
  • 1 cup semisweet chocolate chips

Instructions:

  1. Prepare the Chocolate Truffle Base:
    • In a medium saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.
    • Remove from heat and add the chopped semisweet chocolate and butter. Let it sit for 2-3 minutes to melt.
    • Stir until smooth and glossy. Add the vanilla extract and mix well.
    • Pour the mixture into a bowl and refrigerate for at least 2 hours, or until firm enough to scoop.
  2. Shape the Truffles:
    • Once the truffle mixture is firm, use a small scoop or spoon to form small balls. Place them on a baking sheet lined with parchment paper.
    • Refrigerate the truffle balls for another 30 minutes to firm up.
  3. Prepare the Caramel Drizzle:
    • In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar dissolves.
    • Increase the heat to high and cook without stirring until the mixture turns a deep amber color.
    • Remove from heat and carefully add the heavy cream, butter, vanilla extract, and salt, stirring until smooth. Be cautious as the mixture will bubble up.
    • Let the caramel cool slightly.
  4. Assemble the Truffles:
    • Once the truffle balls are firm, drizzle the caramel sauce over the top.
    • Immediately sprinkle the semisweet chocolate chips over the caramel drizzle while it is still warm so they adhere to the truffles.
  5. Chill and Serve:
    • Refrigerate the truffles for at least 1 hour to set the caramel and chocolate chips.
    • Serve chilled or at room temperature.
