Ingredients:
For the Red Velvet Cake:
- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon fine salt
- 1 teaspoon cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk, at room temperature
- 2 large eggs, at room temperature
- 2 tablespoons red food coloring (adjust to desired color)
- 1 teaspoon white distilled vinegar
- 1 teaspoon vanilla extract
For the Cream Filling:
- 1 cup heavy cream
- 8 ounces cream cheese, softened
- 1/2 cup confectioner’s sugar
- 1 teaspoon vanilla extract
For the Chocolate Ganache:
- 1 cup heavy cream
- 1 1/2 cups dark chocolate chips or chopped chocolate
Instructions:
Cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Mix dry ingredients: In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
- Combine wet ingredients: In another bowl, gently whisk together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla.
- Combine wet and dry ingredients, mixing until smooth and divided evenly between the prepared pans.
- Bake for 25-30 minutes until the cake tester comes out clean. Let cool in pans for about 10 minutes, then turn out onto a cooling rack to cool completely.
Cream Filling:
- Beat the heavy cream until stiff peaks form.
- In another bowl, beat the cream cheese with sugar and vanilla until smooth.
- Fold the whipped cream into the cream cheese mixture until well combined.
Ganache:
- Heat the cream in a small saucepan over medium heat until it begins to simmer.
- Add the chocolate to the cream, turning off the heat. Let stand for 5 minutes and then stir until smooth.
- Let the ganache cool slightly before using.
Assembly:
- Trim the tops of the cakes if they’ve domed to make them level.
- Place one cake layer on your serving plate and spread the cream filling over the top.
- Top with the second cake layer and pour the ganache over the cake, using a spatula to smooth it out over the top and sides.
- Chill for at least 30 minutes before serving.
