Ingredients:

For the Red Velvet Cake:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon fine salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tablespoons red food coloring (adjust to desired color)
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon vanilla extract

For the Cream Filling:

  • 1 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1/2 cup confectioner’s sugar
  • 1 teaspoon vanilla extract

For the Chocolate Ganache:

  • 1 cup heavy cream
  • 1 1/2 cups dark chocolate chips or chopped chocolate

Instructions:

Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. Combine wet ingredients: In another bowl, gently whisk together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla.
  4. Combine wet and dry ingredients, mixing until smooth and divided evenly between the prepared pans.
  5. Bake for 25-30 minutes until the cake tester comes out clean. Let cool in pans for about 10 minutes, then turn out onto a cooling rack to cool completely.

Cream Filling:

  1. Beat the heavy cream until stiff peaks form.
  2. In another bowl, beat the cream cheese with sugar and vanilla until smooth.
  3. Fold the whipped cream into the cream cheese mixture until well combined.

Ganache:

  1. Heat the cream in a small saucepan over medium heat until it begins to simmer.
  2. Add the chocolate to the cream, turning off the heat. Let stand for 5 minutes and then stir until smooth.
  3. Let the ganache cool slightly before using.

Assembly:

  1. Trim the tops of the cakes if they’ve domed to make them level.
  2. Place one cake layer on your serving plate and spread the cream filling over the top.
  3. Top with the second cake layer and pour the ganache over the cake, using a spatula to smooth it out over the top and sides.
  4. Chill for at least 30 minutes before serving.
