Chocolate Lava Cake Recipe

 

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, plus more for greasing
  • 1 cup bittersweet or semisweet chocolate chips
  • 2 eggs
  • 2 egg yolks
  • 1/4 cup sugar
  • 2 tablespoons all-purpose flour
  • Pinch of salt
  • Ice cream or whipped cream, for serving (optional)

Equipment:

  • Oven-safe ramekins (4 to 6 depending on size)
  • Mixing bowls
  • Double boiler or microwave for melting chocolate

Instructions:

  1. Preheat the Oven and Prepare Ramekins:
    • Preheat your oven to 425 degrees Fahrenheit (218 degrees Celsius).
    • Grease four to six ramekins with butter and place on a baking tray.
  2. Melt Chocolate and Butter:
    • Combine the butter and chocolate in a double boiler over simmering water or in a microwave-safe bowl. Melt them together until smooth, stirring occasionally. Set aside to cool slightly.
  3. Mix Eggs and Sugar:
    • In a separate bowl, whisk together the eggs, egg yolks, and sugar until thick and pale.
  4. Combine Ingredients:
    • Fold the melted chocolate mixture into the egg mixture. Then sift in the flour and salt, folding until just combined.
  5. Divide the Mixture:
    • Pour the batter into the prepared ramekins, filling them about three-quarters full.
  6. Bake:
    • Bake for 12-14 minutes, or until the edges are firm but the center is still soft.
  7. Serve Immediately:
    • Remove from oven and let sit for about 1 minute. Carefully invert each ramekin onto a plate. Serve immediately, optionally with ice cream or whipped cream on the side.
