Classic Baked Potatoes with Sour Cream and Chives

 

 

Ingredients:

  • 4 large potatoes (Russet potatoes work best)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup sour cream
  • 1/4 cup fresh chives, chopped
  • Optional: Butter, shredded cheese, or bacon bits for extra toppings

Instructions:

  1. Prepare the Potatoes:
    • Preheat your oven to 400°F (200°C).
    • Wash and scrub the potatoes thoroughly. Pat them dry.
    • Pierce the potatoes with a fork a few times to allow steam to escape during baking.
  2. Season and Bake:
    • Rub each potato with olive oil, and season with salt and pepper.
    • Place the potatoes directly on the oven rack or a baking sheet lined with foil.
    • Bake for 50-60 minutes, or until the skin is crispy and the inside is soft. You can check by inserting a knife into the center—it should slide in easily.
  3. Prepare the Toppings:
    • In a small bowl, mix the sour cream with half of the chopped chives. Set aside.
  4. Assemble the Baked Potatoes:
    • Once baked, remove the potatoes from the oven and let them cool for a few minutes.
    • Slice each potato open lengthwise and fluff the interior with a fork.
    • Add a dollop of sour cream and chive mixture on top of each potato.
    • Sprinkle additional chives and optional toppings like butter, shredded cheese, or crispy bacon bits.
  5. Serve:
    • Serve immediately as a side dish or a light meal.
