Ingredients:

For the Beef Bourguignon:

  • 2 lbs beef chuck, cut into 2-inch cubes

  • 4 tablespoons olive oil
  • 4 slices bacon, chopped
  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 2 cups beef broth
  • 2 tablespoons tomato paste

  • 1 cup pearl onions, peeled
  • 1 cup mushrooms, quartered

For the Mashed Potatoes:

  • 2 lbs potatoes, peeled and quartered
  • 4 tablespoons butter
  • 1/2 cup milk
  • Salt and pepper, to taste

Instructions:

Prepare the Beef Bourguignon:

  1. Prep the Beef:
    • Season beef cubes with salt and pepper, then dredge in flour, shaking off excess.
  2. Brown the Beef:
    • In a large pot or Dutch oven, heat 2 tablespoons olive oil over medium-high heat. Add beef in batches, browning on all sides. Remove beef and set aside.
  3. Cook the Bacon and Vegetables:
    • Add bacon to the pot and cook until crisp. Add chopped onions and carrots, cooking until softened. Stir in garlic and cook for another minute.

    • Drain potatoes and return to the pot. Add butter and milk, mashing until smooth and creamy. Season with salt and pepper.
