Classic Lemon Ice Cream

 

 

 

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1/2 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Base: In a mixing bowl, combine the milk, cream, and sugar. Whisk until the sugar is completely dissolved.
  2. Add Flavor: Stir in the lemon juice, lemon zest, and vanilla extract.
  3. Chill: Refrigerate the mixture for at least 2 hours until it is thoroughly chilled.
  4. Churn: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  5. Freeze: Transfer the ice cream to a freezer-safe container and freeze for at least 4 hours until firm.
  6. Serve: Scoop and serve with additional lemon zest or fresh lemon slices for garnish.

Lemon Curd Swirl Ice Cream

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1/2 cup lemon curd
  • 1 tablespoon lemon zest
  • Pinch of salt

Instructions:

  1. Prepare the Base: In a large bowl, whisk together cream, milk, and sugar until the sugar dissolves.
  2. Churn: Pour the base mixture into your ice cream maker and churn according to the manufacturer’s instructions until almost done.
  3. Add Lemon Curd: During the last few minutes of churning, add the lemon curd and lemon zest to the ice cream and allow to swirl through.
  4. Freeze: Transfer to a freezer-safe container and freeze until solid, about 4 hours.
  5. Serve: Enjoy scooped in a bowl, perhaps with a sprinkle of additional zest or alongside a fresh slice of lemon.
