Classic Matzo Ball Soup
Ingredients:
For the Matzo Balls:
- Matzo meal: 1 cup
- Eggs: 4 large
- Chicken fat (schmaltz) or oil: 1/4 cup
- Water or chicken broth: 1/4 cup
- Salt: 1 teaspoon
- Baking powder: 1 teaspoon (optional, for fluffier matzo balls)
- Fresh parsley or dill: 2 tablespoons, finely chopped (optional)
For the Soup:
- Chicken broth: 8 cups (preferably homemade)
- Carrots: 2, peeled and sliced
- Celery: 2 stalks, sliced
- Onion: 1 small, chopped
- Garlic: 2 cloves, minced
- Bay leaf: 1
- Salt and pepper: To taste
- Fresh parsley or dill: For garnish
Instructions:
- Prepare the matzo ball mixture:
- In a mixing bowl, beat the eggs until well blended. Add the chicken fat (schmaltz) or oil, water or chicken broth, salt, and baking powder (if using). Mix well.
- Stir in the matzo meal until combined. The mixture should be thick but not dry. If you like, fold in the chopped herbs.
- Cover the bowl and refrigerate the mixture for at least 30 minutes to allow it to firm up.
- Form the matzo balls:
- Bring a large pot of salted water or chicken broth to a boil. Wet your hands and form the chilled matzo mixture into balls about the size of a walnut (they will expand as they cook).
- Drop the matzo balls into the boiling water or broth. Reduce the heat to a simmer, cover the pot, and cook for 30-40 minutes, until the matzo balls are cooked through and tender.
- Make the soup:
- While the matzo balls are cooking, prepare the soup. In a large pot, bring the chicken broth to a simmer. Add the carrots, celery, onion, garlic, and bay leaf.
- Season with salt and pepper to taste. Simmer the soup until the vegetables are tender, about 15-20 minutes. Remove the bay leaf.
- Combine and serve:
- Once the matzo balls are done, carefully transfer them to the soup pot using a slotted spoon. Let them warm up in the soup for a few minutes.
- Ladle the soup into bowls, making sure each serving gets a couple of matzo balls. Garnish with fresh parsley or dill.
