Classic New York-Style Cheesecake with Raspberry and Chocolate Topping
Ingredients:
For the Crust:
- Graham cracker crumbs: 1 1/2 cups (about 10 full crackers)
- Sugar: 1/4 cup
- Butter: 1/2 cup (1 stick), melted
- Cocoa powder: 2 tablespoons (optional, for a chocolate crust)

- Cream cheese: 4 (8 oz) packages, softened
- Sugar: 1 cup
- Sour cream: 1 cup
- Vanilla extract: 1 teaspoon

- Fresh raspberries: 1 cup
- Chocolate (dark or milk): 2 oz, chopped or in pieces

- Prepare the Crust:
- Preheat your oven to 325°F (163°C).
- In a medium bowl, mix the graham cracker crumbs, sugar, melted butter, and cocoa powder (if using) until well combined.
- Press the mixture evenly into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then remove from the oven and let it cool.
- Make the Cheesecake Filling:
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the sugar and beat until combined.
- Add the sour cream, vanilla extract, and lemon zest (if using), and mix until smooth.

- Serve:
- Carefully remove the cheesecake from the springform pan and place it on a serving plate.
- Slice with a clean, sharp knife, wiping the knife clean between each cut for neat slices.
