Classic Quiche Recipe
Ingredients:
- For the Crust:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 3-4 tablespoons ice water
- For the Filling:
- 1 cup shredded Gruyère cheese
- 1/2 cup shredded cheddar cheese
- 4 large eggs
- 1 1/2 cups heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 1/2 cup cooked bacon, chopped (optional)
- 1/2 cup chopped chives or green onions
Instructions:
- Prepare the Crust:
- In a medium bowl, whisk together the flour and salt.
- Add the cold butter pieces and use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together.
- Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Pre-bake the Crust:
- Preheat the oven to 375°F (190°C).
- On a lightly floured surface, roll out the dough into a circle about 12 inches in diameter.
- Transfer the dough to a 9-inch pie dish, trimming any excess dough and crimping the edges as desired.
- Line the crust with parchment paper and fill with pie weights or dried beans.
- Bake for 15 minutes, then remove the parchment paper and weights, and bake for an additional 5 minutes or until the crust is lightly golden. Let cool slightly.
- Prepare the Filling:
- In a medium bowl, whisk together the eggs, heavy cream, salt, black pepper, and nutmeg.
- Sprinkle the shredded Gruyère and cheddar cheese evenly over the bottom of the pre-baked crust.
- Add the chopped bacon (if using) and chives or green onions.
- Pour the egg mixture over the cheese and bacon, spreading it evenly.
- Bake the Quiche:
- Bake the quiche in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
- Allow the quiche to cool slightly before slicing and serving.
