Ingredients:

  • For the Meat Filling:
    • 1 lb (450 g) ground beef or lamb
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 1 cup frozen peas
    • 1 cup frozen corn
    • 2 carrots, diced
    • 2 tablespoons tomato paste
    • 1 cup beef or vegetable broth
    • 1 teaspoon Worcestershire sauce
    • 1 teaspoon dried thyme
    • Salt and pepper to taste
    • 2 tablespoons olive oil
  • For the Potato Topping:
    • 2 lbs (900 g) potatoes, peeled and quartered
    • 1/4 cup (60 ml) milk
    • 2 tablespoons butter
    • Salt and pepper to taste
    • 1/4 cup grated cheese (optional)

Instructions:

Preparing the Meat Filling:

  1. Cook the Meat: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until the onions are translucent. Add the ground beef or lamb, breaking it up with a spoon, and cook until browned.
  2. Add Vegetables and Seasonings: Stir in the carrots, frozen peas, and corn. Add the tomato paste, Worcestershire sauce, thyme, salt, and pepper. Cook for a few minutes until well combined.
  3. Simmer: Pour in the broth and bring the mixture to a simmer. Reduce the heat and let it simmer gently for about 10 minutes, or until the liquid is slightly reduced and thickened.

Preparing the Potato Topping:

  1. Boil the Potatoes: While the meat simmers, place the potatoes in a pot of salted water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
  2. Mash the Potatoes: Drain the potatoes and return them to the pot. Add the milk, butter, salt, and pepper. Mash until smooth and creamy. Adjust seasoning as needed.

Assembling and Baking:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Layer the Pie: Spoon the meat mixture into a baking dish. Spread the mashed potatoes over the meat in an even layer. If using, sprinkle the grated cheese on top.
  3. Bake: Place the dish in the oven and bake for about 20 minutes, or until the potato topping is golden and the edges are bubbly.
  4. Broil for Finish: For a crispier top, broil for an additional 2-3 minutes until the top is golden brown.

Serving:

  1. Rest and Serve: Let the shepherd’s pie sit for a few minutes after removing it from the oven before serving. This helps the layers set slightly and makes it easier to serve.
