Coconut Bundt Cake Recipe
Ingredients:
- For the Cake:
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup coconut milk
- 1 cup shredded coconut
- For the Topping:
- 1/2 cup shredded coconut
Instructions:
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour a bundt cake pan.
2. Mix Dry Ingredients:
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.

- In a large mixing bowl, beat the butter and sugar together until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
4. Combine with Dry Ingredients:
- Alternately add the dry ingredients and coconut milk to the butter mixture, starting and ending with the dry ingredients. Fold in the shredded coconut.
5. Bake the Cake:
- Pour the batter into the prepared bundt pan. Smooth the top with a spatula. Sprinkle the top with an additional 1/2 cup of shredded coconut.
- Bake in the preheated oven for about 55-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
6. Cooling and Serving:
- Allow the cake to cool in the pan for about 10 minutes, then turn out onto a wire rack to cool completely.
- Serve as is or with a dusting of powdered sugar if desired.
