Ingredients:

  • For the Cake:
    • 2 1/2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 cup unsalted butter, softened
    • 2 cups granulated sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup coconut milk
    • 1 cup shredded coconut
  • For the Topping:
    • 1/2 cup shredded coconut

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a bundt cake pan.

2. Mix Dry Ingredients:

  • In a bowl, whisk together the flour, baking powder, and salt. Set aside.

3. Cream Butter and Sugar:

  • In a large mixing bowl, beat the butter and sugar together until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.

4. Combine with Dry Ingredients:

  • Alternately add the dry ingredients and coconut milk to the butter mixture, starting and ending with the dry ingredients. Fold in the shredded coconut.

5. Bake the Cake:

  • Pour the batter into the prepared bundt pan. Smooth the top with a spatula. Sprinkle the top with an additional 1/2 cup of shredded coconut.
  • Bake in the preheated oven for about 55-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.

6. Cooling and Serving:

  • Allow the cake to cool in the pan for about 10 minutes, then turn out onto a wire rack to cool completely.
  • Serve as is or with a dusting of powdered sugar if desired.
