Coconut Cream Dessert Cups
Ingredients:
- 2 cups coconut milk
- 1 cup whole milk
- 1/2 cup sweetened condensed milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut (plus extra for garnish)
- Optional: Whipped cream for topping
Instructions:
- Mix the ingredients:
- In a medium saucepan, whisk together the coconut milk, whole milk, sweetened condensed milk, sugar, cornstarch, and salt until smooth.
- Cook the pudding:
- Place the saucepan over medium heat and cook, whisking constantly, until the mixture thickens and begins to bubble (about 8-10 minutes).
- Once thickened, remove the saucepan from the heat and stir in the vanilla extract and shredded coconut.
- Assemble the dessert cups:
- Divide the pudding evenly among small serving cups or glasses.
- Let the pudding cool to room temperature, then chill in the refrigerator for at least 2 hours.
- Garnish and serve:
- Before serving, top each dessert cup with a sprinkle of shredded coconut.
- Optionally, add a dollop of whipped cream for an extra touch of indulgence.
