Colorful Pichi-Pichi

 

 

Ingredients:

  • 2 cups grated cassava (fresh or frozen, thawed)
  • 1 cup sugar
  • 1 1/2 cups water
  • 1/2 tsp lye water (lihiya)
  • 1 cup grated coconut (for coating)
  • Food coloring (purple, green, yellow)

Instructions:

  1. Prepare the Cassava Mixture:
    • In a large mixing bowl, combine grated cassava, sugar, water, and lye water. Mix well until the sugar is dissolved and the mixture is smooth.
  2. Add Food Coloring:
    • Divide the cassava mixture into three equal parts. Add a few drops of purple food coloring to one part, green to the second part, and yellow to the third part. Mix each part until the color is evenly distributed.
  3. Steam the Pichi-Pichi:
    • Pour each colored mixture into individual heatproof containers or small molds.
    • Place the molds in a steamer and steam over medium heat for 40-45 minutes, or until the mixture becomes translucent and firm.
  4. Cool and Coat:
    • Allow the steamed pichi-pichi to cool slightly before removing from the molds.
    • Roll each piece in grated coconut until fully coated.
  5. Serve:
    • Arrange the colorful pichi-pichi on a serving platter and enjoy!
