Soft, buttery, and packed with tender cinnamon-spiced apples, this Country Apple Fritter Bread is topped with a sweet vanilla glaze that makes every slice taste just like a classic apple fritter. It’s perfect for breakfast, dessert, or an afternoon coffee break.
Ingredients
For the Bread
1/2 cup unsalted butter, softened
2/3 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
2 medium apples, peeled and diced
For the Cinnamon Apple Mixture
1/3 cup brown sugar
1 teaspoon ground cinnamon
For the Glaze
1/2 cup powdered sugar
1–2 tablespoons milk
1/2 teaspoon vanilla extract
Preparation Steps
Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
Mix the brown sugar and cinnamon together in a small bowl. Toss the diced apples with half of the cinnamon sugar mixture.
In a large bowl, cream the butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then add the vanilla.
Whisk together the flour and baking powder. Add the dry ingredients to the butter mixture alternately with the milk, mixing just until combined.
Spread half of the batter into the prepared loaf pan. Add half of the apple mixture and sprinkle with some of the remaining cinnamon sugar.
Top with the remaining batter, then finish with the rest of the apples and cinnamon sugar. Lightly swirl with a knife.
Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
Let the loaf cool for 15 minutes before removing it from the pan.
Whisk together the powdered sugar, milk, and vanilla, then drizzle the glaze over the cooled bread.
Serving Tip
Enjoy a thick slice slightly warm with a cup of coffee or tea. The bread also tastes wonderful toasted with a little butter the next day.
