Creamed Chipped Beef on Toast Recipe

 

Ingredients:

  • 8 oz dried beef (such as Hormel dried beef), rinsed and chopped
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 4 cups whole milk
  • 1/2 teaspoon black pepper (or to taste)
  • 1/4 teaspoon garlic powder (optional)
  • 6-8 slices of bread, toasted
  • Optional: Chopped fresh parsley for garnish

Instructions:

1. Prepare the Beef:

  1. Rinse the dried beef under cold water to remove excess salt. Pat it dry with paper towels.
  2. Chop the beef into bite-sized pieces or thin strips.

2. Make the Cream Sauce:

  1. In a large skillet, melt the butter over medium heat.
  2. Once the butter is melted and bubbling, add the flour and whisk continuously to form a roux. Cook for about 1-2 minutes, until the mixture is smooth and lightly golden.
  3. Gradually add the milk to the roux, whisking constantly to prevent lumps. Continue to cook and stir until the sauce thickens, about 5-7 minutes.

3. Add the Beef:

  1. Stir the chopped dried beef into the cream sauce.
  2. Add the black pepper and garlic powder (if using). Stir to combine and heat through, about 2-3 minutes.

4. Serve:

  1. Toast the slices of bread to your desired level of crispiness.
  2. Spoon the creamed chipped beef mixture over the toasted bread.
  3. Garnish with chopped fresh parsley if desired.

Tips:

  • You can adjust the thickness of the sauce by adding more or less milk, depending on your preference.
  • For a bit of variety, you can add some sautéed onions or mushrooms to the cream sauce.
  • This dish is traditionally served over toast, but you can also serve it over biscuits, potatoes, or rice.
