Creamy Baked Chicken Casserole

 

Ingredients:

  • 4-6 boneless, skinless chicken breasts
  • 1 cup uncooked rice (white or brown)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 1/2 cups chicken broth
  • 1/2 cup milk
  • 1 cup shredded mozzarella or cheddar cheese (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme (optional)
  • Salt and pepper to taste
  • Fresh parsley or chives, chopped (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. Prepare the rice: Spread the uncooked rice evenly across the bottom of the prepared baking dish.
  3. Mix the creamy base: In a medium bowl, whisk together the cream of chicken soup, sour cream, chicken broth, milk, garlic powder, onion powder, thyme (if using), salt, and pepper until smooth.
  4. Assemble the casserole: Pour half of the creamy mixture over the rice in the baking dish. Lay the chicken breasts on top of the rice. Pour the remaining creamy mixture over the chicken breasts, ensuring they are evenly covered. If using, sprinkle shredded cheese over the top.
  5. Bake: Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the top is golden and bubbly.
  6. Garnish and serve: Remove the casserole from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley or chives before serving.

Notes:

  • Rice options: If using brown rice, you may need to increase the baking time slightly.
  • Vegetables: You can add vegetables like broccoli, mushrooms, or spinach to the casserole for added nutrition.
  • Cheese: For a richer flavor, you can use a combination of mozzarella, cheddar, or Parmesan cheese.
