Creamy Baked Pork Chops with Potatoes
Ingredients:
- 4 pork chops (bone-in or boneless)
- 4 medium potatoes, thinly sliced
- 2 tbsp olive oil
- 1 medium onion, thinly sliced
- 3 garlic cloves, minced
- 1 cup heavy cream (or half-and-half for a lighter option)
- 1/2 cup chicken broth
- 1/2 cup shredded Parmesan cheese
- 1 tsp Dijon mustard
- 1/2 tsp dried thyme or rosemary
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions:
- Prepare the Pork Chops:
- Preheat the oven to 200°C (400°F).
- Season the pork chops with salt and pepper.
- Heat olive oil in a skillet over medium heat. Sear the pork chops for 2-3 minutes on each side until golden brown. Remove and set aside.
- Prepare the Potatoes:
- Arrange the sliced potatoes in a single layer in a greased baking dish.
- Season the potatoes with salt, pepper, and thyme.
- Make the Creamy Sauce:
- In the same skillet, sauté the onion until softened.
- Add garlic and cook for another minute.
- Pour in the heavy cream, chicken broth, and Dijon mustard. Stir in the Parmesan cheese and let it simmer for 2-3 minutes until slightly thickened. Adjust seasoning with salt and pepper.
- Assemble and Bake:
- Pour half of the creamy sauce over the potatoes. Place the seared pork chops on top.
- Pour the remaining sauce over the pork chops.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the sauce is bubbly.
- Serve:
- Garnish with fresh parsley and serve hot with a side salad or steamed vegetables.
Tips:
- For extra flavor, add a sprinkle of paprika to the pork chops before searing.
- Substitute pork chops with chicken breasts if preferred.
- Add a handful of shredded mozzarella on top for extra cheesiness.
