  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste

  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced (such as cremini or button)
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • Fresh parsley, chopped for garnish

Instructions:

  1. Prepare Chicken: Season the chicken breasts generously with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  2. Cook Mushrooms and Aromatics: In the same skillet, melt the butter. Add the onion and garlic, sautéing until the onion becomes translucent. Add the mushrooms and thyme, and cook until the mushrooms are golden and the moisture has evaporated.

  4. Combine Chicken and Sauce: Return the chicken to the skillet, spooning the sauce over the chicken. Reduce the heat to low and simmer for a few more minutes, until the chicken is heated through and the sauce is creamy and smooth.
