Ingredients:
For the Custard:
- 1 can (14 oz) sweetened condensed milk
- 2 cups whole milk
- 1 cup coconut milk
- 3 tablespoons cornstarch
- 1/2 cup shredded coconut (unsweetened or sweetened, depending on preference)
- 1 teaspoon vanilla extract
For the Topping:
- 1/2 cup shredded coconut (for garnish)
Instructions:
- Prepare the Custard:
- In a medium saucepan, combine the sweetened condensed milk, whole milk, and coconut milk. Stir well to mix.
- Dissolve the cornstarch in a small amount of cold water or milk, then whisk it into the milk mixture to avoid lumps.
- Cook the Custard:
- Place the saucepan over medium heat, stirring constantly to prevent the mixture from sticking to the bottom.
- Cook until the mixture thickens to a pudding-like consistency. This will take about 10-15 minutes.
- Add Flavor:
- Once thickened, remove the pan from the heat and stir in the shredded coconut and vanilla extract.
- Assemble the Dessert:
- Divide the custard evenly into serving cups or small glasses.
- Allow it to cool slightly at room temperature, then refrigerate for at least 2 hours or until fully chilled.
