Creamy Custard with Raisins and Nuts

Ingredients:

  • 1 liter (4 cups) whole milk
  • 4 tablespoons custard powder (vanilla flavor or your choice)
  • ½ cup sugar (adjust to taste)
  • ½ cup condensed milk (optional, for extra creaminess)
  • ½ cup raisins
  • ¼ cup chopped nuts (like almonds, cashews, or pistachios)
  • 1 teaspoon vanilla extract
  • A pinch of saffron strands (optional, for added flavor and color)

Instructions:

  1. Prepare the Custard Base:
    • In a small bowl, mix the custard powder with ½ cup of cold milk to form a smooth paste. Ensure there are no lumps.
  2. Heat the Milk:
    • In a large saucepan, heat the remaining milk over medium heat. Stir frequently to prevent sticking.
  3. Sweeten the Milk:
    • Add sugar and condensed milk (if using) to the hot milk and stir until dissolved.
  4. Cook the Custard:
    • Gradually add the custard paste to the hot milk, stirring continuously to avoid lumps. Lower the heat and continue stirring until the mixture thickens (about 5-7 minutes).
  5. Add Flavors:
    • Stir in vanilla extract, saffron strands (if using), raisins, and chopped nuts. Mix well and cook for another 2 minutes.
  6. Cool and Serve:
    • Pour the custard into individual glasses or bowls. Let it cool at room temperature, then refrigerate for 2-3 hours until chilled.
  7. Garnish (Optional):
    • Before serving, sprinkle additional chopped nuts or raisins on top for garnish.

Enjoy this creamy, nutty, and flavorful custard as a delightful dessert! Let me know if you’d like more variations or tips.
