Creamy Garlic Butter Salmon with Roasted Potatoes and Broccoli

 

 

 

Ingredients:

For the Salmon:

  • 2 salmon fillets (6-8 oz each)
  • 2 tablespoons olive oil or butter
  • Salt and black pepper to taste
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken or vegetable broth
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard (optional)
  • Fresh parsley for garnish

For the Roasted Potatoes:

  • 1 pound baby potatoes, halved
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

For the Broccoli:

  • 1 head broccoli, cut into florets
  • Salt and pepper to taste
  • 1 tablespoon butter or olive oil (optional)

Instructions:

  1. Prepare the Roasted Potatoes:
    • Preheat the oven to 400°F (200°C).
    • Toss the baby potatoes with olive oil, garlic powder, salt, and black pepper.
    • Spread them on a baking sheet and roast for 25-30 minutes, or until golden and tender.
  2. Steam the Broccoli:
    • While the potatoes are roasting, steam the broccoli florets for 5-6 minutes until bright green and tender.
    • Season with salt, black pepper, and a little butter or olive oil, if desired.
  3. Cook the Salmon:
    • Season the salmon fillets with salt and black pepper.
    • Heat olive oil or butter in a skillet over medium heat.
    • Sear the salmon fillets for 3-4 minutes per side, until golden and cooked through. Remove and set aside.
  4. Make the Creamy Sauce:
    • In the same skillet, melt a little more butter and add minced garlic. Sauté for 30 seconds until fragrant.
    • Pour in the chicken or vegetable broth and lemon juice. Let it reduce slightly.
    • Stir in the heavy cream and Dijon mustard (if using). Simmer for 2-3 minutes until the sauce thickens.
    • Return the salmon to the skillet and spoon the sauce over the top.
  5. Assemble and Serve:
    • Plate the salmon with the roasted potatoes and steamed broccoli.
    • Garnish the salmon with freshly chopped parsley and serve warm.
