Creamy Garlic Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
- Fresh parsley, chopped (for garnish)
- Fresh vegetables, diced (for serving, optional)
Instructions:
- Season and Sear the Chicken:
- Season the chicken breasts with salt and black pepper.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts and cook until golden brown on both sides, about 5-6 minutes per side.
- Remove the chicken from the skillet and set it aside.
- Make the Sauce:
- In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Reduce the heat to medium-low and stir in the heavy cream, Parmesan cheese, Italian seasoning, and crushed red pepper flakes (if using).
- Simmer the sauce for 5-7 minutes, until it begins to thicken. If you prefer a thicker sauce, add the cornstarch mixture and stir until the sauce reaches your desired consistency.
- Cook the Chicken in the Sauce:
- Return the chicken breasts to the skillet and simmer for an additional 10 minutes, or until the chicken is cooked through and the sauce is thickened.
- Serve:
- Garnish the creamy garlic chicken with chopped fresh parsley.
- Serve with fresh diced vegetables on the side, if desired.
