Creamy Rice Pudding
Ingredients:
- 1 cup uncooked white rice (short or medium grain is best)
- 2 cups water
- 4 cups whole milk (you can substitute with 2% or a mix of milk and cream for extra richness)
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (plus extra for garnish)
- 1/4 teaspoon ground nutmeg (optional)
- 1/2 cup raisins (optional)
- 1 tablespoon butter (optional for added richness)
Instructions:
- Cook the rice:
- In a medium saucepan, bring the 2 cups of water to a boil. Add the rice, reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed.
- Add milk and sugar:
- Once the rice is cooked, add the milk, sugar, and salt to the saucepan with the cooked rice. Increase the heat to medium and stir frequently until the mixture begins to thicken, about 20 minutes. Be careful not to let the milk boil over.
- Add flavorings:
- Once the pudding has thickened, stir in the vanilla extract, ground cinnamon, and ground nutmeg (if using). If you like raisins in your rice pudding, add them now. Continue to cook for another 5 minutes until the pudding is creamy and the flavors are well combined.
- Finish and serve:
- If using, stir in the tablespoon of butter for added richness. Remove the pudding from the heat and let it cool slightly.
- Serve the rice pudding warm or chilled, sprinkled with extra cinnamon on top.
This rice pudding is creamy and comforting, perfect as a dessert or even a sweet breakfast treat. If you want a more indulgent version, you can substitute part of the milk with cream or add a dollop of whipped cream on top before serving.
