Creamy Sausage and Tortellini Skillet
Ingredients:
- 1 lb Italian sausage (mild or spicy, depending on preference)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- 1 (9 oz) package refrigerated cheese tortellini
- 1 ½ cups shredded mozzarella cheese (or a mix of mozzarella and Parmesan)
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the Sausage:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the Italian sausage and cook, breaking it up into chunks as it browns, for about 5-7 minutes or until fully cooked.
- Remove the sausage from the skillet and set aside on a plate.
2. Sauté the Aromatics:
- In the same skillet, add the chopped onion and cook for 3-4 minutes, until softened.
- Add the minced garlic and cook for another 1 minute, until fragrant.
3. Prepare the Sauce:
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream and Italian seasoning. Let the sauce simmer for about 5 minutes, reducing slightly.
4. Cook the Tortellini:
- Add the cheese tortellini directly to the skillet with the cream sauce. Stir to coat the tortellini evenly.
- Cover and let the tortellini cook in the sauce for about 5-7 minutes, or until tender and heated through.

- Stir the cooked sausage back into the skillet with the tortellini.
- Sprinkle the shredded mozzarella (or cheese mix) over the top.
- Cover the skillet and let the cheese melt over low heat, or transfer the skillet to a preheated oven at 375°F (190°C) and bake uncovered for 5-10 minutes until the cheese is bubbly and golden.
6. Serve:
- Garnish with fresh parsley and a pinch of black pepper.
- Serve the creamy sausage and tortellini skillet hot.
