Creamy Sausage and Tortellini Skillet

 

Ingredients:

  • 1 lb Italian sausage (mild or spicy, depending on preference)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 (9 oz) package refrigerated cheese tortellini
  • 1 ½ cups shredded mozzarella cheese (or a mix of mozzarella and Parmesan)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

1. Cook the Sausage:

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the Italian sausage and cook, breaking it up into chunks as it browns, for about 5-7 minutes or until fully cooked.
  • Remove the sausage from the skillet and set aside on a plate.

2. Sauté the Aromatics:

  • In the same skillet, add the chopped onion and cook for 3-4 minutes, until softened.
  • Add the minced garlic and cook for another 1 minute, until fragrant.

3. Prepare the Sauce:

  • Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  • Stir in the heavy cream and Italian seasoning. Let the sauce simmer for about 5 minutes, reducing slightly.

4. Cook the Tortellini:

  • Add the cheese tortellini directly to the skillet with the cream sauce. Stir to coat the tortellini evenly.
  • Cover and let the tortellini cook in the sauce for about 5-7 minutes, or until tender and heated through.

5. Combine and Bake:

  • Stir the cooked sausage back into the skillet with the tortellini.
  • Sprinkle the shredded mozzarella (or cheese mix) over the top.
  • Cover the skillet and let the cheese melt over low heat, or transfer the skillet to a preheated oven at 375°F (190°C) and bake uncovered for 5-10 minutes until the cheese is bubbly and golden.

6. Serve:

  • Garnish with fresh parsley and a pinch of black pepper.
  • Serve the creamy sausage and tortellini skillet hot.

Tips:

  • Make it Creamier: For an even creamier sauce, add a little more heavy cream or stir in some cream cheese.
  • Vegetable Add-Ins: You can add vegetables like spinach or sun-dried tomatoes for extra flavor and color.
  • Meat Substitution: If you prefer, you can use chicken breast chunks instead of sausage.
